The mussel is a bivalve mollusc with an elongated, firm and smooth shell, typically dark blue to black in colour, with slightly irregular edges and a pearly interior. Cultivated in coastal waters and farming parks, it develops a fleshy and succulent meat with an intense, fresh and slightly sweet flavour, reflecting the quality of the environment in which it grows.
It lives attached to rocks or farming structures by strong filaments known as byssus threads, forming dense populations that ensure consistent availability. Highly appreciated in Portuguese cuisine, the mussel is a versatile ingredient, ideal for steaming, grilling, soups or seafood rice dishes, where it retains its firm texture and distinctive flavour of the sea.
