Product Characteristics

The canilha is the adult female of the murex Bolinus brandaris, recognised by its robust, spiral-shaped shell adorned with ridges and protrusions, giving it a rustic yet elegant appearance. The external colouration ranges from dark brown to cream, sometimes with mottled or yellowish tones that reflect its natural habitat. The shell opening is protected by a strong operculum, allowing the animal to withdraw completely when disturbed.

It inhabits rocky or mixed seabeds, often concealed among algae or within crevices, where it feeds on small molluscs and organic matter. The meat of the canilha — particularly the ovary — is highly valued in Portuguese gastronomy, offering a firm texture, delicate and slightly sweet flavour, and an intense marine aroma. Marketed live, it guarantees maximum freshness and quality, making it ideal for boiling, grilling or inclusion in traditional and gourmet dishes, where its unique and natural flavour truly stands out compared to the male or other whelk species.
